Breakfast is the hardest meal to manage everyday in my house. But really, it’s the most important meal. I mean, you just don’t function right on an vacant stomach. And your brain isn’t firing on all cylinders either, you know what I mean? So breakfast is the meal that I struggle to earn the whole family to feast on busy school and workday mornings.

Generally I can only get my boys to eat scrambled eggs, so this was a great way to change it up and still give them something they relax. This was a huge hit!! They really tasted amazing. Cottage cheese is having a moment right now if you haven’t noticed and lately, I’ve been making these cottage cheese egg muffins that I first developed back in 2013. They’re still just as good as I remember.
Cottage Cheese Egg Muffins
These are similar to traditional egg muffins, but instead of being all egg, I mixed in some cottage cheese to change things up! You can just mix the cottage cheese in as is, but I’ve also discovered that if you don’t love cottage cheese, blending it up first to make it smooth it an easy trick. I actually use an immersion blender to to blend my cottage cheese and eggs together.

The nice thing about these muffins is that they’re super easy to customize so here’s how I make them:

Today I am going to share the easiest of low fat breakfast recipes. These slimming world style Baked Ham And Egg Cups With Cheese are just divine. Additionally, they are also super easy to make.
For me following a healthy diet plan is all about having a bank of recipes ready to use, that are tasty and easy to make. Especially at breakfast time, you want something quick and easy to pop in the oven whilst you enjoy a coffee and read the news right?
How To Make Slimming World Baked Ham And Egg Cups.
Ingredients For Ham, Egg And Cheese Breakfast Cups….
Fry Light cooking spray
6 free range eggs
6 slices of ham
20 grams of low fat cheddar
3 chopped fresh chive leaves
Salt and pepper to season.
Making Slimming World Friendly Breakfast Cups
Pre heat the oven to 200°
Using a muffin tin, spray 6 of the cups with fry light so your slimming world ham cups don’t stick.
Now line each cup with a slice of ham ensuring you push the ham into the cups, before cracking an egg into each ham lined breakfast cup.
Sprinkle a small amount of cheese on the top of each cup and then sprinkle the chopped chives before seasoning and placing in the pre heated oven.
